    Heat olive oil in a pan over medium-high heat. Add the beef mince, sliced capsicum, and red onion. Cook until the beef is browned and veggies are softened.

    Break up the mince with a wooden spoon as it cooks to ensure small, even crumbles.

    Stir in the cumin, smoked paprika, garlic powder, chilli powder, salt, and pepper. Cook for another 2 minutes to let the spices toast and coat the beef.

    If the pan looks too dry, add a tiny splash of water to help the spices distribute.

    In an air-fryer-safe dish, layer the corn tortilla chips, the cooked beef and vegetable mixture, black beans, and grated cheese.

    Layering is key so you don't end up with a mountain of cheese on top and dry chips at the bottom.

    Place the dish in the air fryer and cook at 356°F for 3–4 minutes, or until the cheese is bubbly and slightly golden.

    Keep an eye on it! Chips can go from crunchy to burnt very quickly in the air fryer.

    Top with Greek yoghurt, sliced avocado, and fresh coriander before serving.

    A squeeze of fresh lime juice really makes the beef flavours pop!
